Yummy Summer Salad

Ingredients

  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 basket cherry tomatoes, cut in half
  • 1 can water chestnuts, cut in half
  • 1 can black olives, cut in half
  • 1 can green olives, cut in half
  • 2 sm boxes of raisins
  • 1 cucumber, cut into chunks
  • 1 bunch cilantro, chopped
  • 1 basket alphalfa sprouts, optional
  • 10 radishes, cut into thirds
  • 2 stalks celery
  • 1 lime
  • Mrs Dash

Preparation

Step 1

Combine all ingredients, except lime. Add Mrs. Dash to taste and squeeze juice of the lime over salad, mix well and refrigerate.

Serve in a low fat whole wheat tortilla with some fat free cream cheese for a different taste.
Or serve up in bowls for a refreshing summer salad
