Ingredients
- 4 medium peppers, halved and seeded
- 1 box (6.2 oz) zesty Southwestern rice mix
- 8 oz Cheddar cheese (1 1/2 c diced & 1/2 C shredded)
Preparation
Step 1
Preheat oven to 425F.
Arrange peppers cut side down in baking dish. Pour 1/4 C water, cover tightly with foil. Bake 20 minutes, or until peppers are tender. Drain peppers on paper towels.
While peppers cook, prepare rice as box directs. Cool slightly, then stir in diced cheese. Fill peppers and arranfe in baking dish, sprinkle with shredded cheese. Bake uncovered about 5 minutes until cheese melts. Garnish with cilantro if desired.
