Ingredients
- Olive oil
- 1 onion (diced)
- 3 garlic cloves (sliced thin)
- 1 tablespoon Fennel seeds
- salt and pepper
- 1 cup beef or chicken stock
- 2 cups fresh pureed tomato
- 6 sausage links (cut into meatball-size pieces)
- Parmesan
- 1 bunch fresh basil
- Bread
Preparation
Step 1
Place a heavy bottomed pot over medium-high heat and add 3 tablespoons olive oil. Once oil shimmers and is hot, add onions and garlic to pan and toss to coat. Add fennel seeds. Season with a large pinch of salt. Cook for 8-10 minutes or until onions soften.
Add stock, with wooden spoon scrape bits from bottom of pan. Add tomato sauce to pan and bring to a boil Reduce to simmer and continue to cook for 5 more minutes.
Add sausage and simmer until fully cooked, about 10-12 minutes. Once tomato sauce has reduced and is thick, adjust seasoning.
Top with parmesan cheese and handful of torn basil. Serve with hot crusty bread.
