HAM AND POTATO AU GRATIN

Ingredients

  • 1/4 cup chopped onion
  • 2 Tbs. butter, divided
  • 3 cups diced potatoes, cooked
  • 1 pound fully cooked ham, cubed
  • 1/4 cup mayo
  • 1 Tbs. flour
  • 1/8 tsp. pepper
  • 3/4 cup milk
  • 1 cup (4 oz) cheddar cheese

Preparation

Step 1

In a skillet, saute onion in 1 tablespoon butter until tender. Combine onions with potatoes, ham and mayo; pour in an ungreased 11x7 baking pan. In a saucepan, melt remaining butter, stir in flour and pepper until smooth.

Gradually add milk; bring to a boil. Cook and stir for one minute. Stir in cheese, just until melted. Pour over potato mixture. Cover and bake at 350 for 30 minutes or until bubbly.
