Ingredients
- 1/3 cup + 1 Tbsp. All-Purpose Flour, divided
- 1 Tbsp. Grated Parmesan cheese
- 1 tsp. salt, divided
- 1/2 tsp. pepper, divided
- 1/2 tsp. ground cumin
- 1/8 tsp. Garlic powder
- 1/8 tsp. Cayenne pepper
- 1 lb. boneless, skinless chicken breasts, pounded 1/4" thick
- 1 egg
- 1 cup Buttermilk, divided
- 1/4 cup + 1 Tbsp. Veg. Oil, divided
- 1 cup Saltine cracker crumbs
- 1 large onion, thinly sliced
- 1/4 cup chicken broth or water
- 1 Tbsp. Chopped fresh Parsley

Step 1
In bowl, mix 1/3 cup flour, cheese, 1/2 tsp. salt, 1/4 tsp. pepper, cumin, garlic powder and cayenne. Season chicken with 1/4 tsp. salt and 1/8 tsp. pepper. In another bowl, mix egg and 1/4 cup buttermilk. In skillet, heat 1/4 cup oil over med-high heat. Dredge chicken in flour mixture; dip in egg mixture, then in cracker crumbs. Add to hot oil. Reduce heat to medium; cook until chicken is golden brown, turning once, 2-3 min. Per side. Heat remaining oil over heat. Cook onion 10 minutes, scraping up brown bits from skillet. Reserve 2 Tbsp. Onion. Add remaining flour, gradually add remaining buttermilk, chicken broth, salt and pepper. Bring to boil; cook, stirring constantly until thickened, 2-3 minutes. Serve sauce over chicken. Sprinkle with reserved onions and chopped parsley.
