Ingredients

  • 1/2 lb asparagus, cut into 2" pieces
  • 1 ripe avocado, sliced and divided
  • 1 lime, zested and juiced
  • 3/4 cup ranch dressing
  • 3 tbs chopped fresh basil
  • 6 hard boiled eggs, sliced
  • 4 cups baby spinach
  • 4 slices cooked bacon, chopped
  • 1 cup halved grape tomatoes
  • 1/4 cup sliced red onions

Preparation

Step 1

In pot, cook asparagus in boiling salted water 1 min or until crisp-tender. Drain and pat dry.

In bowl, toss avocado with 1 tbs lime juice; set aside. In bowl, combine dressing, basil and 1/2 tsp. lime zest.

Layer eggs, spinach, bacon, tomatoes, onions, avocados and asparagus in 6 glasses. Drizzle with dressing.
