Brown's Vegetable/Beef Stoup

Ingredients
- 1 large Vidalia Onion
- 6 stalks of Celery
- 1 box of Vegetable broth – (it’s about 1 quart of broth) I have used Emeril’s and others, but I have found the large boxes work better than bullion cubes and/or the small cans of broth.
- 1 box of Beef broth
- 2 Tablespoons Chef Paul Prudhommes Magic Seasoning Blends
- (Vegetable Magic)
- 1 cup chopped carrots or mini carrots
- 1 cup chopped green beans
- 1 cup corn
- 1 cup chopped green/red/yellow pepper
- 1 cup chopped mushrooms
- 2 lbs meat chopped into bite size pieces. (can use a combo of pork and beef)

Preparation
Step 1
Cook chopped onion and celery in canola oil until soft.
Add chopped meat and brown.
Season with salt, pepper and seasoning blends.
Add 2 boxes of broth
Add vegetables in this order from longest cook time to shortest cook time.
Green beans and carrots
Chopped peppers
Mushrooms
Add 2 - 14 oz cans stewed tomatoes
If it is too bland, I add more of the Magic Seasoning Blend
This same recipe can be used with turkey or chicken substituting chicken broth for the beef broth and maintaining the vegetable broth.
I have used broccoli and cauliflower as additional vegetable also. Sometimes I leave out the corn.
