Jerk Chicken with a papaya & mango salsa

Easy to make very colorful got this recipe from a cooking class I took at Disneyland
Ingredients
- DRY RUB
- 2 teaspoons allspice
- 2 Tablespoons Garlic Powder
- 2 1/2 teaspoons Thyme
- 1/2 teaspoon cinnamom
- 1/2 teaspoon Canayane Pepper
- 1/2 teaspoon salt
- 4 Large boneless Chicken Breasts
- Salsa
- 1 cup papaya chopped fine
- 1 cup chopped fine mango
- 1/2 cup Yellow Bell Pepper finely chopped
- 1/2 cup Red bell Pepper finely chopped
- 1 Red onion finely chopped
- 1/4 cup Brown Sugar
- 1/2 cup chopped cilentro
- Dash of black pepper
- cooked rice
- 1/4 cup cooked peas
- 1/4 cup oil

Step 1
In ziplock put all ingredients for Dry Rub together and mix up
place chicken in bag and coat each chickenbreast
In frying pan heat oil and brown chicken breasts on each side then put in a baking dish in oven at 350 for 15 minutes
make salsa
in a bowl add all of the chopped vegtables and then brown sugar and Mangos and papya
and pepper and red onions mix and keep chilled
place 1 chickenbrest on each persons plate and serve with cooked rice with cooked peas mixed in the rice put fresh salsa on top of chicken
