Roast Chicken

Ingredients

  • 1 whole roasting chicken
  • Fresh sage
  • Fresh thyme
  • Olive oil

Preparation

Step 1

Preheat oven to 425. Remove giblets, rinse chicken, and pat dry. Loosen the skin on the breast side of the chicken and stuff in fresh sage and thyme (often sold together in a package).

Use olive oil to coat skin if chicken all around. Place in roasting pan and cook until legs pull away and juices run clear, about 50 to 60 minutes. Remove from oven and let rest 15 minutes before serving.
