Ingredients

  • 2 1/2 cups (12 ounces) flour or "00" flour
  • 1 tablespoon kosher slat
  • 4 eggs
  • 1 tablespoon evoo

Preparation

Step 1

Using hands as scoop, scoop four handfuls of flour (one per egg)
Make well on work surface
Place eggs in middle of well
Add salt and evoo
Begin mixing eggs with flour with a fork until sticky
Once sticky begin fold mixture with bench scrapper

Roll through pasta machine. First on "0" tri fold and roll three times on "0"
Increase number until desired thickness
