  • 2 Cups seeded, chopped tomatoes (red, yellow and orange)
  • 1/4 C diced red onion
  • 1/2 tsp minced garlic
  • 1/4 tsp freshly ground cumin, roasted
  • 2 Tbsp freshly squeezed lemon juice
  • 1 jalapeno pepper, seeded and diced
  • 1/4 C diced green mango (optional)
  • salt and pepper
  • 1/2 C minced cilantro leaves (garnish)

Preparation time 40mins
Cooking time 40mins


Step 1

Combine the first 7 ingredients and the mango if using.
Season to taste with salt and pepper.
Just before serving, garnish with the cilantro.
