Italian Fish Bake

This is a very easy, low-fat recipe that can be put together in a snap. The veggies can be changed to your liking - try green peppers and celery. Add a side of pasta or rice, and a salad for a complete meal.

Ingredients

  • 2 lbs. cod or haddock filets (preferably thawed, but semi-frozen is ok)
  • 1 small onion, sliced
  • 1-2 small zucchini, halved and sliced
  • 1/4 tsp. GROUND BLACK PEPPER
  • 1/4 tsp. GRANULATED GARLIC
  • 1 1/2 tsp. CALIFORNIA BASIL
  • 1/2 tsp. MARJORAM
  • 1 15 oz. can tomato sauce
  • 1 14 oz. can diced tomatoes with juice

Preparation

Step 1

Preheat oven to 350°. Place the fish filets in an ungreased 9x13 glass baking dish. Put the sliced onion and zucchini around the fish. Sprinkle the PEPPER, GARLIC, BASIL, and MARJORAM over the fish and vegetables. Pour the tomato sauce and diced tomatoes with juice over the top. Bake for 45-60 minutes or until the fish is white and flakes when cut with a fork. Periodically baste the fish with the pan juices so the tomato sauce doesn't dry out on top.
