Ingredients
- Seasoning:
- 2 T light soy sauce
- 1 T oil
- 1 T cornstarch
- 1 tsp salt
- 1/2 tsp sesame oil
- 2 T water
- 1 1/2 lbs chicken breast, cut into cubes
- Sauce:
- 1 1/2 tsp cornstarch
- 1 C chicken stock or water
- 2 tsp dark soy sauce
- salt to taste
- 2 T oil
- 1 onion, peeled and cut into chunks
- 2 green onions, finely chopped
- 1 " fresh root ginger, peeled and thinly sliced
- 4-5 pineapple rigns, cut into chunks
Preparation
Step 1
Mix the seasoning ingredients together.
Add the cubed chicken and marinate for 10-12 minutes.
Mix the sauce ingredients together in a bowl.
Heat the oil in a wok and fry the onions for 2 minutes until just tneder. Add the drained chicken and fry for 3-4 minutes.
Add the ginger and fry for 1 minute.
Add any remaining mariade and the sauce ingredients and bring to a boil. Cook, stirring, until the sauce thickens then add the pineapple chunks. Heat through. Remove from heat and serve with fried rice.
