Raisin Filled Cookies

Ingredients

  • Cookie:
  • 1 c packed brown sugar
  • 1 c sugar
  • 1 c butter
  • 2 t cream of tartar
  • 2 t vanilla
  • 1 c milk
  • 5 c flour
  • 1 t baking soda
  • 1/2 t of salt
  • 3 eggs
  • 1/4 t ground nutmeg
  • Filling:
  • 1-1/2 c raisins
  • 3 T flour
  • 1 c packed brown sugar
  • 2 c boiling water
  • 1 T cornstarch

Preparation

Step 1

Cream sugar and butter. Then add tartar, baking soda, and salt. Mix well. Add milk, and vanilla alternately with the flour. Roll dough out to 1/4 inch thick then cut into 3 inch round. Put 2 teaspoons of filling on cookie then cover with another cookie round. Press edges together with a fork to seal. Cut a slit in top of cookie. Bake at 350 for 10-15 minutes.
Filling:
Combine cornstarch, flour, and brown sugar in saucepan. Add water stirring constantly. Add raisins; stir and cook until mixture comes to a boil and is thickened, about 3 minutes. Cool.
