Ingredients
- 6 T honey
- 5 T lime juice (approx. one large lime)
- 1 T chili powder
- 1/2 t garlic powder
- 1 lb cooked, shredded chicken or 2 large chicken breasts
- 8-10 flour tortillas
- 1 lb monterey jack cheese, shredded
- 16 oz. green enchilada sauce
- 1/2 cup to 1 cup heavy cream

Step 1
mix honey, lime juice, chili powder, and garlic together and toss with the chicken. Let it marinate for at least 30 minutes. Pour about 1/2 cup of enchilada sauce in the bottom of a 9x13 baking dish. Fill flour tortillas with chicken and shredded cheese. Save about 1 cup of cheese to sprinkle on top of enchiladas. Mix remaining enchilada sauce with cream and leftover marinade. Pour sauce on top of enchiladas and sprinkle with cheese. Bake at 350 for 30 minutes or until brown and crispy on top.
