Garlic-Parmesan Broccoli with Pine nuts

Ingredients

  • 1 head broccoli, trimmed and cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • Pinch red pepper flakes
  • 1/4 cup very finely grated Parmesan (using a rasp grater)
  • 2 tablespoons pine nuts, roasted

Preparation

Step 1

In a pot of lightly salted boiling water, cook the broccoli until just tender, 5 minutes. Drain. (Or microwave in steamer for 5 minutes)

In a large saute pan or skillet, heat the oil over medium heat. Add the garlic and cook, stirring, until fragrant and starting to turn golden, 1 1/2 to 2 minutes. Add the lemon juice, salt and pepper flakes and stir to combine. Add the broccoli and pine nuts and cook until warmed through and coated with the oil mixture. Adjust the seasoning to taste.

Toss with the Parmesan and serve immediately.
