Mom's Lemon Squares
Yum! From my childhood :)
- Lemon Squares:
- 1 cup flour
- 1/2 cup butter
- 1/4 cup powdered sugar
- Mix together (cutting in the butter, similar to pie crust) and press into a 8 X 8 pan. Bake 20 min at 350.
- 2 Tablespoons lemon juice (fresh or bottled)
- 1/2 teaspoon lemon zest (optional)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 eggs
Mix with a hand beater until foamy- just 1-2 min. Pour onto crust. Bake additional 20 min, until firm. Do not over bake.
Cool, dust with powder sugar, and cut into squares.
I used to like them chilled (pre GF days!) they are a refreshing dessert!
