Ingredients
- 2 C canned chicke breast meat
- 1 C sliced celery
- 1/2 C snipped dried apricots or golden raisins
- 1/3 C sliced almonds, toasted
- 1/2 C mayo
- 2 T frozen orange juice concentrate, thawed
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- lettuce
- tomato slices
Preparation
Step 1
In large bowl stir together chicke, celery, apricots and almonds. Add mayo, juice and seasonings. Mix well, Refrigerate.
Line 4 plates with lettuce leaves and tomaot slices. Top with chicken salad
A great sandwich filling in pita bread, croissants or crusty rolls.
