BBQ Chicken Sandwich

Ingredients

  • Garlic Pesto Mayo:
  • 1/4 C lemon juice
  • 2 T olive oil
  • 1 T Dijon mustard
  • 1 tsp pepper
  • 2 cloves garlic, minced
  • pinch each dried basil, oregano and thyme
  • 4 boneless skinless chicken breasts
  • 1/4 tsp salt
  • 4 Portuguese buns
  • 4 lettuce leaves
  • 1 large plum tomato, sliced
  • 4 thin slices red onion
  • 1/2 C light Mayo
  • 1 T prepared pesto
  • 1 clove garlic, minced

Preparation

Step 1

In bowll, mix juice, oil, mustard,pepper, garlic, basil, oregano and thyme. Add chicken; cover and refrigerate for 1 hours.

Mix mayo ingredienst.

Remove chicken from marinade; sprinkle with salt. Place on greased grill over medium-high heat; cover and cook for 5 to 7 minutes per side or until no longer pink inside. Toast cut side of buns on grill. Spread with maoy; layer with lettuce, tomato, onion and chicken;
