Tomatoes Stuffed with Crumbs and Herbs

  • 6 ripe red tomatoes
  • Salt and pepper
  • 1 or 2 cloves mashed garlic
  • 3 tbsp minced scallions
  • 4 tbsp fresh basil or parsley
  • 1/8 tsp thyme
  • 1/4 tsp salt
  • Big pinch pepper
  • 1/4 cup olive oil
  • 1/2 cup bread crumbs
  • Shallow oiled roasting pan



Step 1

1. Remove stems from tomatoes and cut in half crosswise
2 carefully press out juice and seeds
3. Sprinkle halves with salt and pepper
4. Blend all filling ingredients in bowl
5. Fill each tomato a spoonful or 2 of the mixture. Sprinkle with a few drops of the olive oil
6. Arrange in baking pan; do not crowd
7. Bake 15 minutes
