Truffle Roasted Potatoes

  • Red potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon white truffle oil
  • 2 teaspoons fresh thyme leaves

Step 1

Preheat oven to 450 F with jelly roll pan in oven.

Place potatoes on jelly roll pan; drizzle with olive oil and sprinkle with garlic, salt and pepper. Toss well to combine. Bake at 450 F for 35 minutes or until potatoes are brown and tender. Remove from the oven. Drizzle potatoes with the truffle oil and sprinkle with thyme. Toss gently to combine.
