Tangy Cucumber Avocado Salad

Ingredients

  • 2 medium cucumbers, peeled and cubed
  • 2 avocados, peeled and cubed
  • 4 Tbsp. fresh cilantro, chopped
  • 1/2 red bell pepper, chopped
  • 1 clove garlic, minced
  • 2 green onions, finely chopped
  • 1/4 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 large lemon
  • 1 lime
  • 4 cup-like lettuce leaves

Step 1

In a large bowl, combine the cucumbers, avocados, bell pepper, green onion, lime zest and cilantro.

Stir in garlic, salt and pepper. Squeeze lemon and lime over top and toss well. Cover and refrigerate for at least 30 minutes.

Serve in lettuce cups.
