Ingredients
- Button mushrooms large enough for stuffing, with stems removed and finely chopped
- 1 link sausage
- 1 de-seeded jalapeno, finely chopped
- 1 cup grated pecorino
- 1 cup grated Parmesan
- 1 egg yolk
- 1 tablespoon chopped thyme
- 1/2 teaspoon lemon juice

Preparation
Step 1
Preheat oven to 350 degrees F. Remove casing from sausage, then cook sausage in a skillet over medium heat, until it breaks apart. Mix sausage, stems, jalapeno, cheese, yolk, thyme, and lemon juice in a bowl. Stuff mushrooms with mixture. Bake on baking sheet for 20 minutes.
