Ingredients
- 1 slab salmon
- 1/2 cup brown sugar
- 1/2 cup kosher salt
- 1 Tsp garlic powder
- 1 Tsp onion powder
- 1 Tsp allspice
- 2 Tsp lemon juice
- 2 qt water (enough to cover fish)

Preparation
Step 1
1. Add fish to brine & refrigerate over night.
2. Rinse fish.
3. Smoke 3 hours. Turn once.
