Ingredients

  • 1 slab salmon
  • 1/2 cup brown sugar
  • 1/2 cup kosher salt
  • 1 Tsp garlic powder
  • 1 Tsp onion powder
  • 1 Tsp allspice
  • 2 Tsp lemon juice
  • 2 qt water (enough to cover fish)

Preparation

Step 1

1. Add fish to brine & refrigerate over night.
2. Rinse fish.
3. Smoke 3 hours. Turn once.
