Mixed Vegetable and Cheese Roll-Ups

Ingredients

  • 2 sun dried tomatoes (not in oil)
  • 1 cup 2% cottage cheese
  • 1 small bunch arugula, washed
  • 2 chopped scallions
  • 1 tsp balsamic vinegar
  • 1/2 tsp olive oil
  • 4-7 " flour tortillas

Preparation

Step 1

In a small bowl, cover sun-dried tomatoes with boiling water, let stand until plump (5-10 minutes). Chop the tomatoes, return to bowl. Stir in cottage cheese and if desired freshly ground black pepper to taste, set aside.

In a medium bowl, toss the arugula and scallions with the vinegar, oil and salt to taste.

In a hot ungreased cast-iron pan, heat the tortillas one at a time, turning them with tongs (or heat them in a microwave on high with a dampened paper towel between each tortilla).

Place 1/4 of the cottage cheese mixture in a strip down the side of each tortilla. Top with 1/4 of arugula mixture. Roll up tightly and cut diagonally in halves; serve immediately.
