Basic Apple Pie

Ingredients

  • 1 pastry for double crusted pie
  • 6 cups peeled, sliced Granny Smith apples ( about 1 1/2 pounds)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 TBSP all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 TBSP butter, chopped
  • 1 TBSP lemon juice

Preparation

Step 1

1. Roll half of the pastry to 1/8th inch thickness on a surface that's been sprayed with cooking spray. Gently place in a 9 inch pie plate; set aside.
2. Preheat oven to 450 degrees. Combine lemon juice and apples in a large bowl. Combine 1/2 cup sugar and next four ingredients, mixing well. Spoon over apple mixture, tossing gently. Spoon filling evenly into pastry shell and dot with chopped butter.
3. Roll remaining crust 1/8 inch thick and prepare how you want it ( ie. lattice, etc) and bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake 50 minutes more. Key a careful eye pie during cooking, may need to shield if it starts to get too brown, or foil around edges of pie if concerned.
