Tilapia with Olives, Capers and Chilies

  • 2 cups tomato sauce
  • 1/2 cup green Sicilian olives
  • 2 Tbsp. capers
  • 1 tea. dried red chili flakes
  • 1 cup white wine
  • 1/4 cup white wine vinegar
  • 1 tea. sugar
  • 2 fresh tilapia fillets
  • salt and pepper
  • extra-virgin olive oil
  • Crusty bread, for serving

Preparation

Step 1

Preheat oven to 450 degrees.

In a saucepan, combine tomato sauce, olives, capers, chili flakes, wine, vinegar and sugar. Bring to a boil, and then turn off the heat.

Season tilapia fillets with salt and pepper to taste. Place in a baking dish and spoon all the sauce over them.

Bake for 8-10 minutes, or until the fish is cooked through.

Serve on a warm platter with a drizzle of good olive oil and some crusty bread.
