Ingredients
- 3 cups coleslaw mix
- 1/2 cup shredded cheddar cheese
- 1 jalapeno, seeded and chopped
- 2 Tbsp. red onion, chopped
- 1 tbsp. fresh cilantro, minced
- 1/4 cup canned Mexicorn
- 1/2 cup ranch salad dressing
- 1 1/2 tea. lime juice
- 1/2 tea. cumin
Preparation
Step 1
In a large bowl, combine the first 6 ingredients.
In a small bowl, whisk the salad dressing, lime juice and cumin. Pour over coleslaw; toss to coat.
Refrigerate until serving.
