Ingredients
- Whiskey Butter:
- 1/2 cup Jack Daniel's
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1/2 cup beef broth
- 1 Tbsp. Worcestershire sauce
- 1 tea. lemon juice
- 1 tea. garlic powder
- 1 medium onion, diced
- 5-7 lb. chuck roast
- 1/2 cup BBQ sauce
- 1/2 cup minced onion
- 2 cloves garlic, smashed
- 1 jalapeno pepper, minced
- 1/2 cup Jack Daniel's
- 1/4 cup Worcestershire sauce
- 1/4 cup apple cider vinegar
- 1 tea. pepper
- 1 tea. dry mustard
- 3 sticks butter
Preparation
Step 1
Marinade: combine all ingredients except BBQ sauce; mix well. Place roast in zip-lock, add marinade and refrigerate overnight, turning occasionally.
Grill roast over medium heat. Grill about 25 minutes per side, for medium. Baste occasionally with marinade combined with 1/2 cup BBQ sauce. Let rest 10-15 minutes.
Whiskey Butter; in a large sauce pan combine all ingredients except butter, mix well. Bring to a boil and cook for 8-10 minutes reducing by half. Remove from heat, add 2-3 pieces of butter at a time, until all is blended in. Serve at room temperature with grilled roast.
