Spicy Shrimp Kabobs

Ingredients

  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 2 teaspoons reduced-sodium soy sauce
  • 1 teaspoon olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon honey
  • 24 uncooked medium shrimp, peeled and deveined
  • 2 sweet red peppers, cut into 8 pieces each
  • 2 green peppers, cut into 8 pieces each

In a resealable plastic storage bag, combine the lime juice, garlic, soy sauce, oil, red pepper flakes, honey and shrimp. Shake well. Refrigerate for 30 minutes, turning frequently.
Preheat the grill. Remove the shrimp from the marinade; transfer the marinade to a medium saucepan. Thread the shrimp on 4 skewers, alternating with the red and green peppers.
Bring the marinade to a boil over medium-high heat. Cook for 3 to 5 minutes, or until it is reduced by half.
Coat the grill with no-stick cooking spray. Preheat the grill. Grill the kabobs for 8 minutes, or until the shrimp is pink and the vegetables lightly browned, turning once and basting with the reduced marinade. Serve the reduced marinade as a dipping sauce
