Linguini with Lemon Pepper Sicilian Style

This recipe was shown on TV and I have tried it many times. It is simple yet really delicious.

Linguini with Lemon Pepper Sicilian Style

    Lemon (zest and juice)

  • 2

    oz olive oil

  • 1

    teaspoon red pepper flakes

  • 2

    cloves minced garlic

  • ¼

    cup pitted and sliced cured black olives

  • Sea salt and fresh ground pepper to taste

  • Grated Parmesan or grana padano cheese


in Olive oil sauté the garlic just a little then add the olives, and red pepper flakes Cook the linguini and before draining save a little cooking liquid. When spaghetti is cooked add the oil/garlic/olive mixture, then the lemon juice and zest. If the pasta seems a little bit dry add some of the cooking liquid. Add the parsley and just before serving add the parmesan cheese so it doesn't get all sticky in the pan. So very good
