Honey Pork Tenderloin

Ingredients
- 2 T. butter
- 1 lb pork tenderloin, cut in 2" medallions
- 1 c. baby carrots
- 1 large onion, cut in eighths
- 3 T. honey
- 2 T. lemon juice
- 1 T. soya sauce
- 3 cloves garlic, minced
- 1/4 t. ginger
- 1/4 t. salt
- 1/4 t. pepper

Preparation
Step 1
1. Mix honey, lemon juice, soya sauce, garlic, ginger,
salt and pepper in a small bowl and set aside.
2. Melt butter in skillet over medium-high heat.
3. Add medallions and quickly brown.
4. Add onions and carrots, and cook tilonions are just beginning to brown.
5. Pour the honey mixture over the pork, onions and carrots.
6. Cover and cook about 10 minutes, stirring occasionally and turning the medallions until carrots and onions are tender-crisp.
