  • 10 Roma tomatoes, cut lengthwise
  • 1/2 lb bacon strips fried until crispy
  • 4 C iceberg lettuce, finely shredded
  • 3/4 C mayonnaise

Preparation

Step 1

Remove seeds and membranes from tomato halves (discard).
finely chop bacon in food processor.
shred lettuce with hand grater or use grater blade on food processor.

In a large bowl, combine lettuce, bacon and mayo (if to dry add more mayo).

Spoon into tomato halves, place on a platter, garnish with parsley or paprika.
