Balsamic and spice crusted prime rib roast

Ingredients

  • 1 7 pd rib roast about 3 ribs meat cut from bone-meat and bone tied back together
  • 3 t cracked black pepper
  • 2 t fennel seeds
  • 2 t yellow mustard seeds
  • 4 t kosher salt
  • 6 garlic cloves minced
  • 1 T balsamic vinegar

Preparation

Step 1

place roast fat side up in roasting pan and let stand room temp 1 hour
heat oven to 450 with rack in lower third of oven
with a mortar and pestle crush the dry spices-mix in garlic and balsamic vinegar-spread paste evenly over roast
place prime rib on a rack in a roasting pan-roast 20 mins then reduce temp to 325
roast until meat thermometer inserted in center registers 130 for med rare about 2 1/2 hours
transfers to cutting board, tent foil and let stand 15 min before carving
