Mom's Gingerbread with Lemon Sauce

Ingredients

  • 1 c grandmas molasses.
  • 1/2 c sugar
  • 1/2 c melted margarine/butter
  • 2 t ginger
  • 2 t cloves or allspice
  • 1/2 t soda
  • 1 c boiling water
  • 10 1/2 c flour
  • 2 well beaten eggs
  • Sauce
  • 1 c sugar.
  • 1 T flour.
  • 1 c boiling water
  • Juice and rind of 1 lemon
  • 2 T butter

Preparation

Step 1

Put molasses in a bowl, add sugar,butter,ginger and cloves.
Dissolve soda in boiling water and add to first mixture.
Add flour and eggs. Batter will be thin.
Do not fill pan more than 1/2 full.
Cook for 30 min in 375 oven. Stored in covered tin, it will keep indefinitely...really?

Sauce
Mix first three ingredients and let this come to a boil.
Boil several minutes.
Add lemon juice and rind.
When slightly thick, take off stove and add butter.
