Ingredients

  • 1 1/2

    cups almond flour

  • 3

    eggs (whites and yolks separated)

  • 3/4

    cup canned coconut milk (full fat)

  • 1/4-1/2

    cup almond milk

  • 3

    tbsp maple syrup

  • 1

    tsp vanilla

  • 1/2

    tbsp cinnamon

  • 1/2

    tsp baking soda

  • salt, to taste

  • 1

    cup Enjoy Life chocolate chunks (or other dark chocolate chips)

Directions

Turn on waffle iron to heat up. Whisk together egg yolks and coconut milk.Combine almond flour, baking soda, cinnamon, and salt in a separate bowl. Add wet ingredients to dry and mix together. Add in maple syrup and vanilla and continue to mix. Next, add almond milk. In a stand mixer (or with a hand mixer), whisk egg whites until they become fluffy and stiff peaks form (this will take a few minutes). Fold egg whites into batter. Stir in chocolate chunks. Pour batter into waffle iron and cook to your liking (note: these do not become SUPER crispy).
