Ingredients

  • 1 1/2 cups almond flour
  • 3 eggs (whites and yolks separated)
  • 3/4 cup canned coconut milk (full fat)
  • 1/4-1/2 cup almond milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/2 tbsp cinnamon
  • 1/2 tsp baking soda
  • salt, to taste
  • 1 cup Enjoy Life chocolate chunks (or other dark chocolate chips)

Preparation

Step 1

Turn on waffle iron to heat up.

Whisk together egg yolks and coconut milk.Combine almond flour, baking soda, cinnamon, and salt in a separate bowl.

Add wet ingredients to dry and mix together. Add in maple syrup and vanilla and continue to mix. Next, add almond milk.

In a stand mixer (or with a hand mixer), whisk egg whites until they become fluffy and stiff peaks form (this will take a few minutes). Fold egg whites into batter. Stir in chocolate chunks.

Pour batter into waffle iron and cook to your liking (note: these do not become SUPER crispy).
