Ingredients
- 1/4 cup margarine
- 4 ounces fat-free cream cheese, softened
- 1 cup sugar
- 1 egg
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 cups huckleberries or blueberries
Preparation
Step 1
Preheat the oven to 350 F. Beat the margarine and cream cheese in a bowl with a mixer at medium speed until fluffy. Beat in the sugar gradually. Add the egg and beat well. Combine the flour, baking powder and salt in a small bowl. Stir into the margarine mixture. Stir in the vanilla. Fold in the huckleberries. Pour into a 9-inch round baking pan sprayed with nonstick cooking spray. Bake for 1 hour. Let cool slightly before serving.
