CATHY’S LASAGNA

Ingredients

  • Sauce:
  • 1 lb ground beef
  • 1/2 c chopped onions
  • 1 clove garlic, minced
  • green and red pepper
  • 15 oz Italian stewed tomatoes
  • 6 oz tomato paste
  • 15 oz tomato sauce
  • Filling:
  • Filling: 2 eggs (beaten), 15 oz ricotta, 1/2 c Parmesan, 2 T parsley, 1/2 tsp pepper

Preparation

Step 1

Cook beef in large skillet. Add onions, garlic, and pepper. Add tomatoes and simmer 15 minutes. Layer: 1/2 tomato sauce, 3 lasagna noodles, 1/2 cheese mixture, 2 c mozarella cheese, 3 lasagna noodles, remaining cheese mixture, remaining tomato sauce, 2 c mozarella cheese. Bake 375, 30 minutes.
