Ingredients
- The juice of 1 large lemon ( or 1/4 cup)
- 1/4 cup tahini
- 2 cloves garlic, minced
- 2 1/2 tbsp olive oil
- 1/2 tsp sesame oil
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 can chickpeas, drained and rinsed
- A couple tablespoons water
- Paprika and olive oil for top
Preparation
Step 1
Combine lemon juice and tahini in food processor. Blend for about 30 seconds then scrape sides and blend for another 30 seconds.
Add seasonings- olive oil, garlic, sesame oil, cumin, salt, garlic powder. If you don't have sesame oil don't worry about it, it's not crucial.
Blend for 30 seconds, scrape sides and blend again.
Drain and rinse chickpeas and then add half to food processor. Blend for 1 minute then scrape and add other half. Blend for another minute.
At this point taste and add water until it is the consistency you like. Make sure it is well blended!!
Serve with a dash of paprika and a drizzle of olive oil.
