Hummus bi Tahini

Chick peas, or garbanzo beans as they are called in Mexico, seem to be a real mainstay of the daily fare in the Middle East. Pureed chick peas, combined with tahini (sesame seed paste) and mashed garlic, make the delicious appetizer knowns as "hummus bi tahini," often served with pita bread. Sesame seeds are a source of valuable calcium, eaten as they are in such large quantity as tahini.

Ingredients
- 2 cups cooked chick peas
- 1/2 to 1 cup bean broth or water
- 2 cloves garlic
- 6 to 8 tablespoons lemon juice, to taste
- 1/2 cup tahini (sesame seed paste)
- 1 tsp salt
Preparation
Step 1
Combine cooked chick peas, bean broth or water, garlic, lemon juice, salt and tahini in container of electric blender and blend to a smooth puree. Thin to desired consistency with more bean broth or water.
