BREAKFAST - Boder's Blueberry or Cherry Muffins

Ingredients

  • 2 cups flour
  • 4 tsp. baking powder
  • 3/4 cup sugar
  • 1 tsp. salt
  • 1 cup frozen or canned blueberries (drained) or frozen canned tart cherries
  • 2 eggs
  • 1/2 cup melted butter
  • 1 cup milk

Preparation

Step 1

Sift dry ingredients in large bowl. Add fruit and mix until well coated. In small bowl beat eggs well. Add melted bitter and milk. Quickly stir mixture into dry mix. DO NOT OVERMIX. (causes mixture to be tough) Either spray muffin tins or use paper cups. Fill 3/4 way and sprinkle with additional sugar. Bake 400 degrees for 20 minutes. Depending on tin size makes 12.
