Easy Lemon Tart or Pie
- 1 1/4 cup sugar
- 1 cup plue 2 tbs butter (2 1/4 sticks)
- 5 eggs, beaten
- 1/4 cup lemon juice
- 1 1/2 - 2 tsp lemon peel, grated
- 1 vanilla bean, split and scraped
- 1 9in pie crust - bake according to directions
- Toasted walnuts to garnish
Combine first 6 ingredients in a double broiler.
Place over simmering water and beat until thick.
Remove vanilla bean.
Pour into pie shell and chill until firm.
Decorate with whipped cream or walnuts.
