Easy Lemon Tart or Pie

Ingredients

  • 1 1/4 cup sugar
  • 1 cup plue 2 tbs butter (2 1/4 sticks)
  • 5 eggs, beaten
  • 1/4 cup lemon juice
  • 1 1/2 - 2 tsp lemon peel, grated
  • 1 vanilla bean, split and scraped
  • 1 9in pie crust - bake according to directions
  • Toasted walnuts to garnish

Preparation

Step 1

Combine first 6 ingredients in a double broiler.
Place over simmering water and beat until thick.
Remove vanilla bean.
Pour into pie shell and chill until firm.
Decorate with whipped cream or walnuts.
