Roasted Potatoes with Garlic, Lemon and Oregano

Ingredients

  • 3 lbs potatoes, cut in 1 1/2" cubes
  • 1/2 c. olive oil
  • 4 cloves garlic, minced
  • 1 1/2 t. dried oregano, crushed
  • 1 t. salt
  • pepper
  • 1/2 c. chicken stock
  • 1/3 c. fresh lemon juice
  • 2-3 T. chopped fresh oregano

Preparation

Step 1

1. Preheat oven to 400 degrees F.

2. Place potatoes in a single layer in a large baking dish.

3. Mix garlic, dried oregano, salt, pepper and loive oil. Pour over potatoes and toss to coat evenly.

4. Bake for 15 minutes.

5. Add stock, toss and bake for 10 minutes.

6. Add lemon juice, toss and bake 10-15 minutes more, ot til potatoes are cooked through.

7. If desired, broil potatoes til golden brown.

8. Sprinkle with fresh oregano and serve immediately.
