Oatmeal Raisin Cookies

Ingredients

  • 1/4 cup butter
  • 1/3 cup low-fat cream cheese
  • 1 cup brown sugar
  • 1 egg yolk
  • 3/4 teaspoon vanilla
  • 3/4 cup all-purpose flour
  • 1-1/2 cup rolled oats
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Preparation

Step 1

Preheat oven to 350 degrees.
Lightly coat a baking sheet with canola oil.
In a large bowl, combine butter, cream cheese and brown sugar. Add egg yolk and vanilla and mix briefly.
Combine remaining ingredients in a large bowl.
Add to creamed mixture and mix until all dry ingredients are moistened.
Drop about one heaping teaspoonful of dough about 1-1/2 inches apart on an oiled cookie pan, bake for 7 minutes. Lightly flatten with finger and bake another 4 minutes.
