Phyllo-Topped Salmon Casserole

Ingredients
- 1 large onion, chopped
- 1 garlic clove, minced
- 5 T. butter, divided
- 1 1/4 c. milk
- 1 8oz pkg cream cheese, softened, cubed
- 2 c. frozen peas and carrots, thawed
- 2 potatoes, diced
- 12 oz salmon
- 1/2 t. salt
- 1/4 t. pepper
- 10 sheets phyllo dough

Preparation
Step 1
1. Preheat oven to 375 degrees F.
2. In a large skillet, saute onion and garlic in 2 T. butter for 5 minutes, til translucent.
3. Add milk, potatoes and salmon fillets. Heat over medium heat til bubbles form around side of pan.
4. Flake salmon, add cheese and stir til cheese is melted. Remove from hear.
5. Stir in peas and carrots and salt and pepper.
6. Melt remaining butter; brush some over bottom and sides of a 2 1/2 qt baking dish.
7. Line baking dish with 5 sheets of phyllo. Pour in salmon mixture.
8. Crimp remaining sheets of phyllo and place over filling to cover top.
9. Brush dough with remaining butter.
10. Bake 30-35 minutes til crust is lightly browned.
