Ingredients

  • 1 Tbsp canola oil
  • 4 lamb shanks
  • salt and pepper
  • 1 cup finely chopped yellow onion
  • 2 med cloves garlic mince
  • 3 / cup red wine
  • 8 oz (2 cups) fresh or frozen cranberries
  • 1 cup low salt beef broth
  • 1/3 cup honey
  • 3 Tbsp minced canned chipotles in adobo
  • 2 tsp ground cumin
  • 1/4 cup chopped cilantro

Preparation

Step 1

heat skillet until very hot.
add oil and then add lamb shanks to cook, turning occasionally until broned on all sides 10-12 mins
remove and pu on plate. season with salt and pepper
cook onion in the skillet, until softened 2-3 mins
add garlic and stir for 30 sec
stir in wine, scraping up any bron bits from bottom and bring to boil
stir in cranberries, broth and honey, chopotles and cumin. cook until cranberries start to pop (5 mins)
arrange shanks in skillet, cover tightly with over proof lid or foil and put on baking sheet
transfer to ove and cook, turning lam shanks 2 or3 times during cooking until they're fok tenders 2 to 2 1/2 hours
(can be done up to three days ahead)
slowly reheat, covered in the the oven
stir in 1/4 cup cilantro and season to taste
