Beets - Spiced Beets and Cabbage (with cranberry sauce)

Secret ingredient: whole-berry cranberry sauce

Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 cups coarsely shredded red cabbage
  • 1 1/2 cups peeled, coarsely shredded cooked fresh or canned whole baby beets
  • 1/3 cup canned whole-berry cranberry sauce
  • 1 Tbsp. balsamic vinegar
  • 1 tea. salt
  • 1/4 tea. pepper
  • 1/8 tea. ground allspice
  • 1/8 tea. ground cloves

Preparation

Step 1

In a 10" nionstick skillet or Dutch oven over medium heat, heat the oil for 1 minute. Add the cabbage and saute, stirring occasionally, until it begins to soften, about 5 minutes.

Sitr in the beets, cranberry sauce, vinegar, salt, pepper, allspice and cloves. Cook, covered, until tender, about 10 minutes.
