Pasta Bean Soup

Ingredients

  • 2 onions, finely chopped
  • 3 celery stalks, finely chopped
  • 2 Tbsp. olive oil
  • 1 1.89 litre bottle vegetable cocktail
  • 3 cups water
  • 1 19 oz. can white kidney beans, drained
  • 2 cups whole wheat rotini pasta
  • 1 bag spinach
  • salt and pepper

Preparation

Step 1

In a large soup pot, sauté onion and celery in olive oil.

Add the vegetable cocktail and water. Bring to a boil. Stir in the beans and pasta. Cook 10 minutes until the pasta is tender.

Add the spinach, salt and pepper.

Stir and serve.
