Ingredients
- large Idaho potatoes (1 for every 2 people)
- onion
- 1 hard boiled egg (cold) for each potato
- 1 stalk of celery for every 2-3 potatoes
- 1/2 small Spanish onion for every 2-3 potatoes
- Miracle Whip
Preparation
Step 1
Peel the potatoes and boil until a little soft (not mushy, but not hard).
Slice onion and put potatoes on top of the to cool, for about an hour. The potatoes will pick up the onion flavor while they cool.
Cut the potatoes into chunks, and place in bowl.
Cut boiled eggs into cubes, dice the celery, and dice the Spanish onion. Add to potatoes. Add two or more Tbsp of Miracle Whip and spread or mix with a fork rather than a spoon. You may need to add more Miracle Whip, but don't overdo.
