Banana Pudding, Old Time

Ingredients

  • 1 1/2 cups sugar, divided
  • 2 tablespoons flour
  • 1 1/2 cups evaporated milk
  • 3 eggs
  • 1 stick butter
  • 1 1/2 teaspoons vanilla, divided
  • 3 to 4 Dole bananas
  • 3/4 box vanilla wafers
  • 1/4 teaspoon cream of tarter

Preparation

Step 1

Mix 1 cup sugar and flour in a saucepan. Separate eggs. Stir yolks with a fork until blended. Add milk in same cup as egg yolks. Slowly stir egg mixture into sugar mixture until well blended.

Cook over low heat, stirring often, until a custard forms and thickens. Remove thickened custard from heat, add butter and allow to melt. Cool. Add 1 teaspoon vanilla.

Layer wafers and bananas in a 9 x 5 x 2- inch baking dish. Pour custard over wafers/bananas.

Add cream of tartar to the egg whites. Using electric mixer, beat until frothy. Continue beating and add 1/2 cup sugar and 1/2 teaspoon vanilla. Spread on top.

Bake at 375 degrees 10 to 15 minutes, until brown.

Prep: 15 minutes. Makes 6-8 servings.

Tip: to help bananas ripen, just put them in a paper bag with an apple or tomato. And to keep bananas longer, store them in the refrigerator. The peel will darken but, inside, the fruit will still be firm and delicious.
